I own a Cudy WR3000 V1 (EU1.0) router with SN: WR3000244511019. I would like to install OpenWRT on this router, and I understand that I need the intermediate firmware (removes signature check) to proceed.

No, the AP3000 is a speciail one. You can’t revert back to official Cudy firmware on AP3000 indoor after deploying OpenWrt.
